Four Vegan Cheesey Ideas

 In this experiment (muhahaha!), I made Stuffed Jumbo Shell, Grilled Cheese Sandwich, Quesadilla, and Nacho Cheese.
 First place several Jumbo Shells in boiling water with a slotted spoon. Careful not to burn one's hands. Let boil for about 10 minutes or untill al dente. Cut a 1/4 of an Onion, lay it flat, and cut lengthwise. Place the heat on a medium, and use a skillet to caramelize. These will be placed in the quesadilla later. While that is caramelizing prep the fresh tomato by cutting in 1/2, as well as the avocado. For the avocado, I like to score the meat into sections of 1/4, then scoop the meat out of the skin (for the quesadilla filler) and set aside. I like to remove the seeds and membrane from the center of the tomato, then cut lengthwise. I do not mind the skin this time on the tomato meat (the avocado skin is discarded). By this time the onions should be caramelized. Remove from the skillet and set aside. The Jumbo Shells are cooked and I will remove them from the water, strain, and rinse them a bit (to cool, though not to much. I like some starch)and set aside. Now we have the  caramelized onion, avocado, and tomato, prepared for the Quesadilla filling together and set aside. With the other half of the tomato remove the seeds and membrane as well, and cubed (to use as part of the filling of the Jumbo Shell), set aside. Rinse and chiffonade several leaves of basil, set aside. The difference between a chiffonade and a Jullienne is a Jullienne is used when cutting vegetables and chiffonade is used when cutting leaves. Cut the Vegan cheese 1/4 inch length wise then in half (I happend to use Montery Jack instead of the prefered chedder because the health store I go to was out of the chedder). I am using seven pieces of Jumbo Shells. Then I mix the tomato and chiffonade basil as well as season with salt and pepper, then fill the shells with the filling. Make sure to fill the Jumbo Shells with equal portions. Then add the pieces of Vegan cheese, set aside. Place a hand full of nutritional yeast, 1/4 cup of cubed Vegan cheese, along with a 3/4 cup water in an oven safe sauce  pan
(this will be the dressing to go over the nacho chips and help infuse the Jumbo Shells with more cheese flavor). Place the  pan in a 450 degree broil oven, with the oven rack on the second highest slot
(for about 10-15 minutes). In the mean while heat up a skillet on the oven on a medium-low heat for the Grilled Cheese. I have some olive oil in the pan that I will use to lightly sear the Grilled Cheese. Olive oil is a great source of energy! :) (The type of bread I recommend is Dave's Killer Bread). Place the sandwich on the pan and I like to cover the Grilled Cheese  (and the Quesadilla for that matter) with a lid. I find it keeps in the heat in and makes the cheese melt more efficiently. Now, check on the Jumbo Shells in the oven! Mine are ready! Grab a kitchen towel and be careful when removing it from the oven, and place the sauce pan on a heat resistant surface. Check on the Grilled Cheese sandwich. It should be ready to flip. Then place corn chips and jalepenos on top of that, on a plate. Remove the Jumbo Shells from the sauce pan, onto the plate next to the corn chips with jalapenos on them. Remove the Grilled Cheese and place on cutting board. With the cheese sauce in pan, working quickly so the sauce does not set, stir a bit, and dress the cheese sauce over the Nachos. return to the Grilled Cheese Sandwich. Cut it in half and plate it next to the Jumbo Shells. All that is left is the Quesadilla. I used a flour and corn tortilla in this recipe. On half of the tortilla add cheese, tomato, avocado, and the caramelized onion. Fold and place on a medium-low skillet 3 to 4 minutes on each side . I turn off the heat a minute less on the second side of the Quesadilla and let the residual heat finish cook it the rest of the way. Remove the Quesadilla from the pan, and place on cutting board, and cut in half. Plate. I put all of the foods on one plate to offer a variety.
 I think I kind of over broiled the Jumbo Shells and maybe put too much salt in the Jumbo Shell filling. Other then that, I really enjoyed this meal! Thank you very much! :)
