Animal and Fun Shapes Cookies

Hello. So I gotten this book in the mail the other day about Vegan baking. It is by Chef Chloe Coscarelli and I recommend that everyone on the planet, whom can appreciate the finer things in life, to please purchase her book. I am confident that one will not be disappointed. This recipe is loosely based on her Animal Cookies recipe found therein.

Materials:
Rolling Pin
Metal baking sheet
Parchment Paper
Ex-acto Blade

Ingredients:
½ Cup Apple Sauce
2 ¼ Cup Bob’s Red Mill (Short Bread cookie mix)
1 Cup Confectioners Sugar
1 Cup Water
1 Cup Sugar
Food Coloring
Nonpareils Sprinkles

In mixing bowl add the Bob’s Red Mill cookie mix and sugar, then mix.
Then add the Apple Sauce to the bowl and incorporate. Take the incorporated mixture and place on a floured surface. Start to knead the dough with both of ones hands. Add flour (Short bread cookie mix) as needed, and continue to knead until it is of a dough consistency. Then flour the ball of dough, work bench, and rolling pin to get ready to roll out the dough! 
Roll out the dough. There should be an area of about 2 by 1 ½  of dough to work with.

I did not have a cookie cutter (one time I went to a local place that was like a barn, it had a gazillion and one baking tins! Maybe they had cookie cutters as well? That place was surreal), so I used an Ex-acto art utility blade (that had been properly sterilized), to cut out the shapes. I used my imagination to cut out Animal like shapes, and those of an interesting nature such as a planet, hearts, and a skateboard! :) This took sometime (so I used that time to think, to understand that things take time). Carefully remove the unused portion of the rolled out dough (that can be kept in the freezer for up to a month).
 Spatula the Animals and fun shapes to a Parchment Paper lined Baking Sheet.  
Yay! Were going to be baked!
Place the baking sheet into a 350 degree oven for about 12-15 minutes (keep an eye on them so they will not burn).

  While that is baking, in a  mixing bowl place the Confectioners Sugar and add water until it is of icing consistency. Divide that into small glass cups, to add the desired food coloring!  Stir the glass cup until all of  the food coloring is blended. The cookies should be ready to be removed form the oven! Remove the cookies from the baking sheet and place on a wire rack to cool (I used a grill). After they had cooled for a minute or two, brush on the colored glaze, and sprinkle the Nonpareils on the glazed cookie immediately afterward. 
The Animal Cookies are now pretty much complete! Thank you very much and happy experimenting; Because baking, to me is finding ways to make people happy, your way! Take care! :)
